Polyphenols are the healthy antioxidant substances found in EVOO and also determine the intensity; mild, medium, or robust. As oil ages the phenol level decreases.
What is Oleic Acid?
Oleic acid is the monounsaturated fat in EVOO, the higher the level, the better it is for you. Oleic acid has been linked to improving cholesterol balance, helps regulate healthy blood pressure and may reduce the risk of coronary heart disease.
Can I cook with EVOO?
Absolutely, a lower FFA equals a higher smoke point.
Where do your Balsamic Vinegars come from?
All of our Balsamic Vinegars come from Modena, Italy and are aged for at least 12 years.
